  • ½ cup creamy peanut butter
  • 3/4 cup chicken broth
  • 3 tablespoons low sodium soy sauce
  • 3 cloves garlic
  • 3 tablespoons honey
  • 2 teaspoons hot sauce
  • 2 tablespoons peanut oil can sub olive oil
  • 2 ½ cups broccoli florets
  • ¾ cup baby carrots julienned
  • 1 red bell pepper sliced
  • 1 ½ lbs. boneless chicken breast or thighs
  • ¼ teaspoon white pepper
  • ½ teaspoon salt
  • ½ teaspoon paprika
  • ½ cup cornstarch
  • 1/3 cup peanut oil can sub olive oil
  • 3 cups cooked rice
  • Green onions to garnish
  • Chopped peanuts to garnish

Step-by-Step Instructions
 

  • In a medium-sized bowl, whisk together the delicious sauce ingredients and set aside for later use.
  • Heat up 2 tablespoons of peanut oil in a large skillet. Add the broccoli and carrots, cooking until slightly tender. Toss in those vibrant red peppers and give them a quick sauté.
  • Dice chicken into 2-inch chunks and dry them off. Sprinkle with seasonings, mixing well with tongs to coat evenly. Dust with cornstarch and toss again.
  • In a large skillet, bring 1/3 cup of peanut oil to heat. Fry the chicken in batches until edges are wonderfully crisp. Adjust heat as needed to avoid overcooking.
  • After clearing excess oil, return chicken to skillet. Pour in the sauce, turning everything until beautifully coated.
  • Turn stove to medium, allowing the mixture to heat and naturally thicken. If it gets too thick, a bit of water works wonders to loosen it up.
  • Fold the fresh vegetables into the sauce or keep them on the side. Garnish with a scattering of green onions and peanuts. Serve over rice or noodles for a meal that satisfies.

Notes

Optional Additions: Bean Sprouts, Water Chestnuts, Onions, Celery, Kale, Chow Mein Noodles, Sliced Almonds, Sesame Seeds, red pepper flakes.
The sauce consistency will thicken while cooking. Add water as needed.
