Preheat your oven to 425°F (220°C). Lightly flour a baking sheet or cast iron skillet.
In a large mixing bowl, whisk together the flour, baking soda, and salt.
Gradually add the buttermilk, stirring with a wooden spoon until the dough is too stiff to stir. Then, use your hands to gently knead the dough in the bowl just until it forms a cohesive ball. Add more buttermilk if the dough feels too dry.
Transfer the dough to a floured surface and shape it into a round about 1 ½ inches thick. Transfer to your prepared baking sheet and cut a cross on top of the loaf using a sharp knife.
Bake in the preheated oven for 30-45 minutes, until the bread has risen and the top is golden brown. The bottom should have a hollow sound when tapped.
Allow the bread to cool on a wire rack before slicing. Serve warm with butter or jam.
