Gather all ingredients. Preheat your oven to 350°F (175°C).
Place the chicken in a roasting pan. Inside and out, generously season with onion powder, salt, and pepper. Deposit 3 tablespoons of butter into the chicken cavity, and spread the remaining butter across the bird’s exterior.
Slice the celery into 3 or 4 parts and tuck them inside the chicken cavity.
Bake the chicken, uncovered, in the preheated oven until the inner juices run clear, approximately 1 hour and 15 minutes. A thermometer inserted into the thickest part near the bone should read 165°F (74°C).
