Step-by-Step Instructions
 

  • Warm the olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, sautéing until they're fragrant and translucent, which takes about 3 minutes.
  • Introduce the sliced carrots, celery, potatoes, and zucchini. Stir well, allowing the vegetables to cook for 5 minutes so they begin to soften.
  • Add the vegetable broth and canned diced tomatoes to the mix, stirring thoroughly. Include the dried thyme, smoked paprika, salt, and black pepper. Let this combination come to a boil, then lower to a simmer.
