  • 4 chicken thighs bone-in, skinless
  • 1 tablespoon olive oil
  • 1 large onion sliced
  • 3 cloves garlic minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1 cup chicken broth low sodium
  • 1 cup dried raisins
  • 1 carrot sliced
  • 2 tablespoons fresh cilantro chopped

Step-by-Step Instructions
 

  • Season the chicken thighs with salt and pepper. Heat olive oil in a tajine or large heavy pot over medium-high heat. Add chicken, cooking until browned on both sides, about 5 minutes per side. Remove and set aside.
  • In the same pot, add the sliced onion and garlic, sauté until the onion is translucent, about 5 minutes.
  • Stir in the cumin, coriander, cinnamon, and ginger. Cook until fragrant, about 1 minute.
  • Return the chicken to the pot along with the chicken broth and bring to a simmer. Cover and cook for 35 minutes.
  • Add the sliced carrot and dried raisins, stir to combine, and continue to cook for an additional 15 minutes until the chicken is tender and cooked through.
  • Garnish with fresh cilantro before serving. Enjoy your Moroccan Tajine with warm couscous or crusty bread.
