Indulge in the authentic taste of Morocco with this Moroccan Tajine with tender chicken and sweet dried raisins, a perfect blend of sweet and savory flavors.
Season the chicken thighs with salt and pepper. Heat olive oil in a tajine or large heavy pot over medium-high heat. Add chicken, cooking until browned on both sides, about 5 minutes per side. Remove and set aside.
In the same pot, add the sliced onion and garlic, sauté until the onion is translucent, about 5 minutes.
Stir in the cumin, coriander, cinnamon, and ginger. Cook until fragrant, about 1 minute.
Return the chicken to the pot along with the chicken broth and bring to a simmer. Cover and cook for 35 minutes.
Add the sliced carrot and dried raisins, stir to combine, and continue to cook for an additional 15 minutes until the chicken is tender and cooked through.
Garnish with fresh cilantro before serving. Enjoy your Moroccan Tajine with warm couscous or crusty bread.
