Step-by-Step Instructions

  • Cut each slice of bread and mozzarella cheese into quarters. Layer each piece of mozzarella between two pieces of bread to form a sandwich.
  • In a small bowl, combine the chopped anchovies with some olive oil to form a paste.
  • Spread the anchovy paste between the prepared bread and cheese sandwiches. Thread the sandwiches onto skewers, pressing them gently to secure.
  • In a shallow bowl, beat the eggs and milk together. Season with salt and pepper.
  • Dip each skewer into the egg mixture to coat evenly. Let any excess drip off before setting aside.
  • In a large skillet, heat olive oil and butter over medium heat. Add the skewers, cooking them until golden brown on all sides, about 4-5 minutes.
  • Once cooked, remove from the skillet and drain on paper towels. Sprinkle with grated Parmesan cheese and chopped parsley before serving.

Notes

Pair with a crisp white wine like Pinot Grigio to complement the rich flavors of the cheese and anchovies.
Serve with a fresh arugula salad for a complete meal.
