  • 2 2 - 4 oz. sourdough starter (57 - 113 g)
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 1 teaspoon active dry yeast
  • 3 1/2 - 4 cups bread flour (507 g, 17.9 oz by weight)
  • 4 tablespoons grass-fed butter slightly softened, can substitute olive oil to keep it vegan (57 g or 2 oz. by weight)

Step-by-Step Instructions
 

  • Place all ingredients in your stand mixer's bowl, starting with 3 1/2 cups of flour. Mix with the dough hook for about 5 minutes, adding flour as needed to prevent sticking.
  • Set your oven to 'proof' or to its lowest setting then turn it off. Coat the dough in oil and let it proof in this warm environment for 1-2 hours until doubled.
  • Divide into 6 pieces, flatten each and roll into a log. Let them rest covered and repeat 2-4 times for tension and air bubble release.
  • Use your thumb and fingers to roll the dough from bottom to top, stretching until it resembles a long breadstick.
  • On an oiled pan, place the dough with the seam side up, then flip. Let rise in a warm oven until nearly doubled. Optionally, slash with a bread lame before baking.
  • Bake at 375°F for 15-25 minutes until golden brown. Cover with foil if browning too fast. Cool before cutting.
